I have a solution.

You can use iMessage with only your email address to receive and send messages, you can add and use multiple email addresses. You can also disable facetime/audio calling via the email address you use for iMessage.

So if you have iCloud+, you can create multiple alias email addresses. If you use another email provider that allows you to have aliases, you can create one and you can also use that email as your iMessage address.

But they are email providers that you have to pay for to have access to email aliases. If you don’t want to pay for the email address service, then you can use multiple Outlook/Gmail emails.

So when you want to delete him, you can simply delete your alias email, and disconnect it from iMessage. Whenever you want without ever being bothered by him again.

Whenever a man is asking your number, and he has a Iphone, you simply give him your (alias)emailadres you use for iMessage.
