I totally agree with you! Men don't want a woman who does not exhibit some kind of independence. You are more interesting when you have your own standards, hobbies, and the like.
What I can personally attest to is not being too available to a guy and standing firm on things that are an automatic "no". For example, I am not breaking plans with my friends or family in order to spend time with him, nor am I inviting him along. If I want time to myself, I politely decline his invitation to go out and tell him when I am free that week.
A very hard pass is a request for sexually explicit pictures. It's a solid no, and if he doesn't like that, NEXT!
I think they pity them. They probably think this person is deeply hurt and confused and struggles to find a way out. I can imagine them trying to help if the pick me is someone they care about but outside of that they probably just feel bad for them or maybe annoyed.
I think all men smell the insecurity and vulnerability of a pick me. LVM just take that as an opportunity, while HVM presumably just avoid getting entangled in that kind of mess. I'm unsure about whether HVM pity them (on the one hand it's an objectively HV trait to pity victims - and that's ultimately what pick-mes are: victims of patriarchy - but on the other I'm not sure if men are prone to serious empathy anyway. If you ever volunteer anywhere you'll see the volunteers are basically all women).

For example, my friend constantly makes the above mistakes with men. She can attract men with her looks except that she sends them in the other direction when she does the above. She messes around with them in their car after the first date or sleeps with them after a week.
Instead of keeping her own standards and qualifying him, she lets them qualify her. Then she doesn't understand why they all of a sudden become inconsistent. When a guy stops contacting her whether or not what I mentioned happens, she seeks them out for an explanation and they don't respond.
Desperation is extremely off putting, for anyone, men or women. The difference between HV and LV here is that HV just don't get involved. LV will string them along for the ego boost.
