okay so i know i am simplifying the industry, and that's not right, but there's always one thing about sex work that confuses me: if prostitution is mutually beneficial, why is the sex worker typically suffering and/or getting the shortest end of the stick?

I don’t think the “sex work is work” people understand how they sound or understand reality at all. We’re not talking about just legalizing sexy escorts and OnlyFans, it would legalize human trafficking.
Human slavery is a 150 billion dollar industry today that is present in every single continent and country with 5 million known enslaved and 40 million estimated. Women & girls make up 71% of all victims and 99% of victims in the sex industry.
I don’t think it will ever happen though. The current trend is the opposite. Pay attention to big business right now (especially payment processors) —many are changing their regulations to be anti porn and sex work to avoid what happened to Visa after the PornHub child trafficking scandal went public:

If prostitution were legal it would not pay enough for women to want to do it. And nobody wants to have to tell a man how his personal hygiene is bad and how he needs to take another shower and use soap this time to clean himself well enough so that she can stand it
but as it is right now, these women can turn away men who aren’t clean and can let all the other women in the industry know he is dirty and gross.
women only do this out of desperation and often they have mental health issues that prevent them from being able to have a normal job. Mental health is not taken care of in some countries especially if youre a woman. it is often a mentally unhealthy womans way of surviving. they won’t survive living in a car or outside without being raped anyway so it makes sense to have a roof over your head anyway if you’re gonna get raped might as well have someone pay to do it.
