Company has been underpaying me and CEO makes comments that dont sit well with me, thinks I just "press buttons". This is a company of 5 people in the wellness industry and CEO and COO are sisters. They told me Monday during our meeting they'd like to outsource what I do and have me move to "clientele" which doenst exist, but really they want me to write a damn step by step detailed guide so someone else can take it and fire me. I work in marketing technology with Marketo, Active campaign, Automations, Zapier, shopify ect. Im done and sending my quitting today, unfortiantely my contract has 30 days notice resignation. Im not going to write a damn step by set guide so they keep taking advantage of me, im burned out and my mental health is suffering. Im a people pleaser and my role has changed completely this year with no raise or anything, I overextend and im tired. (when I first started 2 years ago, it was a dream company and got bad this year) Is this email clear, should I mention the high level overview? I am good and will create an overview of eveything I do and where its at and what ti does, but no step by step:

This email is my official written 30 day notice of resignation. These past 2 years and (almost) 2 months have been a valuable period and I appreciate the opportunities I’ve had with the team. However, now is the time for me to leave. I’ll complete the current work and provide a high level overview to ensure a smooth transition of key processes.

Hey love, it's really common for companies' business to have current staff write up 'standard operating procedures' so that others can step into the role. I know it stings, but it's normal business.
Please consider whether resigning is the best option for you. You may be better off doing the work and staying with them until you find another role/they officially let you go. You may get a pay-out if they let you go rather than you quitting (depending on your agreement/laws of the region). Unless your contract is coming to an end, anyway.
I know its a hit to your pride but it's common practice.
I would also challenge you to work on your people pleasing tendencies. eg Ask what 'clientele' involves, and what kind of remuneration/raise it comes with.
